Inspiration from my kitchen to Yours
If you are like me and like some additional taste and green colour on your plate this delicious, easy and quick homemade pesto is a must!

I have enjoyed making this recipe from my teacher Myra Lewin and her cookbook 'Simple Ayurvedic Recipes' since last year. Over the time I tweaked it a little bit to my taste. Sharing this pesto with the group in my last day retreat was a big hit and I would like to share it with you all.
Pesto the Besto Recipe
Ingredients
5-6 large cups of washed and fresh spinach and handful of fresh basil
½ cup olive oil
Pinch of black pepper
Pinch of rock salt
One small handful pine nuts or sunflower seeds
1/2 to 1 tablespoon of nutritional yeast (optional)
Preparation time: 5-10 minutes (depending how organised you are:))
Simmer the spices and nuts in the oil untl the aroma is present.
Pleace all ingredients in the blender and puree. Add some water or more oilive oil as needed for your desired consistency. Depending on the strenghth of your blender, you may need to blend, stop and stir, and then return to blending until mixture is smooth.
That is it! Use pesto on cooked whole grains, cooked vegetables, pizza, wraps - the choices are endless.
Keep refrigerated 3-5 days max.
